Spicy Vegan Beef tacos {Vegan + Soy Free}

Ingredients
FILLINGS

Savoury Mexican-style rice
  • 2 cups white rice
  • Water
  • Salt
  • Pepper
  • Vegan chicken stock
  • 1 teaspoon turmeric
  • 2 tablespoons olive oil
  • 1 white onion, chopped
  • 2 minced cloves of fresh garlic
  • 1 chopped and seeded green bell pepper
  • ½ cup frozen peas
  • ½ cup frozen cubed carrots
  • ½ cup frozen corn
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ¼ to ½ teaspoon cayenne pepper.
Guacamole
  • 2 ripe avocados
  • Juice of ½ lime or lemon
  • 1 tablespoon finely chopped, fresh cilantro
  • 1 teaspoon minced garlic
  • Salt
  • Pepper
Salsa
  • 2 tomatoes
  • 1 red onion
  • 1 red chili
  • 1 teaspoon sugar,
  • 3 tablespoons white vinegar
  • Salt
  • Pepper
  • Optional fresh cilantro
TOPPINGS
  • Chopped cilantro
  • Freshly chopped red chili
  • Slices of pickled jalepeno
  • Slices of pickled jalapeños
  • Freshly chopped cilantro
  • Taco Shells
Instructions
Prepare meatless filling.
  1. Make beefless ground beef using cremini mushrooms, onions, garlic and fresh italian parsley. Full recipe: http://www.swoontastic.com/how-to-make-vegan-ground-beef/
Prepare savory rice.
  1. Cook rice in a pot of boiling water with salt, pepper, vegan chicken stock, and turmeric.
  2. Heat olive oil in a skillet. Sauté onion, minced garlic and green bell pepper.
  3. Sprinkle chili powder, cumin, and optional cayenne pepper.
  4. Add an optional peas, carrot, and corn to the skillet.
  5. Heat through, and finally, add rice when cooked.
  6. Mix well to combine veggies and coat rice with flavors.
  7. Season with salt and pepper, and set aside, keeping warm.
Preheat Oven to warm tacos.
  1. Follow instructions on taco packaging.
Prepare Guacamole
  1. Mashing avocados, add lime or lemon juice, followed by salt and pepper to taste.
  2. Optional: Stir in cilantro, and minced garlic.
Prepare Salsa:
  1. Dice tomato and onion.
  2. Combine in bowl with chili, sugar, white vinegar, salt, pepper and optional fresh cilantro.
Prepare small bowls of toppings.

Heat Tacos, and serve!
